Pumpkin and cashew curry

This is a really easy curry recipe that’s vegetarian as well! It serves 4.

Ingredients:
½ a butternut pumpkin, peeled and chopped
1 onion, chopped
2 cloves of garlic, chopped
½ teaspoon ground cumin
½ teaspoon ground coriander
½ teaspoon garam masala
Chilli powder – depending on how hot you like it
I can coconut cream
1 cup of unsalted cashew nuts


Directions:
Fry the garlic, onion and all the spices for 5 minutes, or until the onion is soft. Add the coconut cream and pumpkin and simmer until the pumpkin is soft and cooked. Add the cashews 5 minutes before serving to warm through. Serve with rice.
