Sometimes it’s best not to ask too many questions when eating tacos filled with meat from street stalls and  shopfront spit roasts – Oaxacan pueblo specialities include meat from all over the animal, from its jowls and tail to the brisket and inner organs. However, if the meat’s origin doesn’t throw you, Oaxacan street stall cuisine, particularly soft tortilla meat tacos, are cheap and delicious and a fine snack before wandering the market.
